Batanes, the Secret Places in the Philippines

The raging sea beats the island of Batanes' as if to say I am King.

The waves violently slap the rocks with enviable freedom. Its stammering power heeds no remorse.

The island however doesn't back down, doesn't fold-up or disintegrates. It takes a proud beating with a 'Hah', I am Batanes.

Batanes should indeed be proud of its coffers. It offers an amazing landscape that is as complex as a Roger Dean art work. The twisting spiraling mountains roll for miles and miles carpeted with green pastures. Atop its numerous cliffs one can get a front seat view of the feisty merging waters of the China Sea with the Pacific Ocean.

There is also something incredibly charming about the island's unique stone houses. Around 3 meters thick, these rock abodes crafted by the ancestors have stood against torturous rain and bullying winds. The roofs are made of cogon providing water proof shade. From afar the houses create an amazing texture of color and form that is bucolic and unlike anything that I've ever been in the provinces I've visited.

In spite the amazing scenery the island's greatest strength is its people - the Ivatans. Storm warriors by birth they still pose a gentle demeanor, friendly disposition and an unbelievable sense of trustworthiness. Crime is said to be non-existent in Batanes and people find no need to lock their doors. There is even a sign posted in the city treasury that reads "LOST AND FOUND - MONEY. Please claim inside".

As most travel junkies know Batanes is the northernmost province of the Philippines and its smallest island both in terms of land area and population. Among its ten petite islands only three are inhabited - Batan, Itbayat and Sabtang. Sandwiched by Babuyan Island and Taiwan, the province is closer to Taipei than Manila. In fact an urban legend states that on a clear day one can see Taiwan and hear Chinese roosters crow.

Growth in Batanes' tourism has been spurred by airlines such as Asian Spirit that conveniently jets weekly flights (for a P10,000 round trip ticket price). Surprisingly posh, the main airport is located in Basco, the province's capital (found in Batan island). Albeit the flight being a bit choppy, I land safely in Batanes and seek my adventure.

                DAY 1 - Going around Basco

A refreshing contrast to other city centers, Basco has neither a mall nor a Starbucks coffee shop - yet. The pseudo-commercial center is a small lane filled with tiny groceries, supplies stores and ukay-ukay shops. Zero tricycles explain the quiet streets and only a couple of jeeps and automobiles exist here.

                2:00 pm
Shanedel's, a family managed inn is a great place to bunk. The place has a killer view of the Batan Bay and is right beside the busy Basco port. An old lighthouse perched on a hill can also be seen. Languid cows graze the pasture. The bovines stood so still I almost doubted they were real.

                5:10 pm
Conveniently, the lighthouse is just a 20 minute walk from my place. The sky was turning crimson as the sun prepared to rest when the moon decided to drop by. I can't tell you how amazing it is to see the sun set and the moon reveal itself simultaneously.

                8:45 pm
Fried flying fish, was my first Batanes dinner. The meat was okay. Nothing fantastic.

                DAY 2 Exploring Batan Island

Batan, is Batanes' second largest island that serve as the center of commerce and houses the seat of the provincial government. Travelers can arrange tour rides that will explore Batan's municipalities which include Basco, Ivana, Uyugan and Mahatao.

                10 am
The 'jeepney topload' is the best seat to take when viewing Batan's landscape. The ride snakes through the island's rolling terrain. Above me are spectacular mountain formations that resemble stoic hunched-back giants. The white sand beach below me boasts pristine waters that splash against massive rocks.

Occasionally the driver parks his vehicle and allows my group to go down to absorb the scenery. There is nothing more lovely than sitting at edge of a cliff to stare at the horizon. No skyscraper, no boats, not a single living person litter my view, just clear blue skies. I pretend this really is the edge of the world.

                12:30 pm - Honesty Store in the town of Ivana
Lunch takes place in an unmanned small canteen stocked with goodies (mami, chips, sodas, biscuits). Owners put their faith in customers' honesty...hence the store moniker.

                2:10 pm - Marlboro Country
After a belly filling lunch I head Payaman town dubbed as Marlboro Country. The tour guide boasts 'Makikita mo parang wala ka sa Pilipinas'. The town does have a different feel to it. The pasture, from a far, is a mixture of deep green and brown hues. The guide explained the brown color is actually thin bamboo wood that cordons an Ivantan family's land from his neighbor. This village is Batanes' version of Tagaytay Highlands but instead of golf courses it is actually cattle pasture. Fantastic!

                DAY 3- Sabtang Island

Sabtang is considered one of the 12 best destinations by the Department of Tourism in 1994. Compared to Batan, the island is less affluent but is more charming (in my opinion). Batan's modern influences has converted its precious stone houses to concrete walls and thatched roofs. Meanwhile Sabtang still has their cobble stoned streets and stone houses intact. Albeit the Sabtang is also beginning to deteriorate as people there are starting to modernize their houses. The danger of spoilage of Batanes is an issue the government must pay attention but that's another article altogether.

Sabtang's landscape is also more breathtaking than Batan's. Steep mountains, deep cannons and a seemingly endless strip of white beach is amazing. Sheer limestone cliffs that plunge into cerulean waters below make it so surreal. I was able to swim in Batanes waters!

P.S. Oh and by the way I saw an independent movie production shooting a scene in the island (these guys did the indie film called Donsol). I heard Angel Aquino was the star. Interesting...

                8 pm - Dinner Time
A birthday party thrown by a fellow adventure seeker spiced up the night. A belly popping feast includes fresh tuna sashimi, lobsters and lechon. We washed it down with a Pinoy ubiquitous drink - Tanduay. Yum.

Other memorable dishes I had in Batanes were fresh blue marlin tuna steak, green pepper filled lapu-lapu fillet, beef steak (lemme tell you they have lots of cows here), cuttle fish and pizza. Yes pizza...there is a pizza maker in Basco named Ivan, my favorite flavors are pepperoni, garlic and cheese and anchovies pizza. You have to order in advance to be able to enjoy its yumminess.

                DAY 4 - Going Home

Flights from Batanes to Manila always take off at around 10 am. There was a certain melancholic feeling that washed over me as I left the quaint island. Probably because I'll be going back to the circus I call my life. I guess one thing I have in common with Batanes is that just like its islands I always try to win over life's metaphoric raging waves.

                THE CHECKLIST

                Batanes will definitely see me again. There are also so many stuff I wasn't able to do.

                Here is my list:

                1. Fly to Itbaya which is Batanes third inhabited island. I was supposed to go but unfortunately the only light aircraft that flies to the island was broken. For those who wish to go to Batanes I suggest you go explore Itbaya first before doing the other island as it is much harder to access.

                2. Climb Mount Iraya

                3. Visit Mavudis island which is the northernmost island of Batanes. Coconut crabs litter the rich marine life filled island.

                4. Explore Nakabuwang Cave in Sabtang and the Chawa cave which is said to be enchanted. It has a natural salt bed and a mouth that opens to South China Sea.

There are numerous exotic and delicious dishes to be found in the Philippines. The different islands and regions of the Philippines tend to provide their own variations and twists to their food menus.                 Adobo

                Adobo is sometimes considered a Spanish cooking process, but Adobo can also refer to a common dish in the Philippines that is cooked in the Adobo style. This is a dish that is usually made with pork or chicken that is slowly cooked in soy sauce, vinegar, garlic, bay leaf and black peppercorns.

                Lumpia

                Lumpia are pastries that are very similar to what we know as spring rolls. The pastries are filled with vegetables or meats and served with various sauces.

                Bistek

                Bistek is a popular dish made with beef strips and onions braised in soy sauce. Sometimes chunks of browned potatoes are added.

                Lechon

                Lechon is a dish that is eaten at celebration or fiesta occasions. It is actually an entire suckling pig that has been slowly roasted over a bed of charcoal. The coals make the pig crispy and it is then served with a liver sauce with vinegar, sugar and herbs.

                Other Common Facets of Philippine Food

As with most Asian countries, rice is a staple food and is served with most dishes. The rice is most often steamed and served during meals. The leftover rice is then commonly used to make sinangag, which is what we would know as fried rice.

Fruits are also commonly incorporated in Philippine cuisine. Coconuts are a popular item to incorporate into meals. Both coconut meat and milk are used extensively. Tomatoes and tomato sauce are also popular, as well as bananas.

The meats that are used in the Philippines are very similar to the meats that we see in the United States. Chicken, beef, pork and fish are the staple meats, just like in the US.

Adobo - A Great Philippine Food

Have you ever seen the video of a Tagalog speaking American cooking "Adobong Manok"? It just shows that Adobo has reached the other side of the world and is being enjoyed by Foreigners also and has been making their own versions of it, that even food spots abroad have concocted their own Adobo. I'm sure that people have already tried phenomenal dish when they visited the Philippines. It's impossible to miss it as you can find it in any restaurant around Manila. Adobo can now be equated to both Philippine culture and the Filipinos in general.

Adobo can be categorized as a stew, unlike other Adobo from other countries like Puerto Rico, which sees it as a marinate for meats. Philippine Adobo is a dish that contains either chicken or pork meat or even at times both, marinated, along with some hard-boiled eggs, for long hours in vinegar, soy sauce and other spices such as garlic, bay leaf and peppercorns. Cooked in oil and served piping hot with steamed rice. The origin of the dish is still unknown but experts say it came from the Malays' Ginataan, which is considered a distant relative of the Adobo. Bathed in coconut milk, Ginataan has chicken and pork with vegetables in it and topped with vinegar and garlic.

Years after that, the Spaniards colonized the Philippines for 400 years and they have imparted to the Filipinos the concept of Adobo, which is the sauce, marinade or seasoning used in cooking a dish. With the prevalence of soy sauce brought by the Chinese traders during that time, Filipinos have created such succulent dish. Others argue that Adobo may have been derived from another Spanish dish-Adobado, which is cured pork loin cooked in olive oil and vinegar. Adobo is so special during the Spanish occupation that they only serve it when guests such as friars or high-ranking government officials come to visit. Adobo can be prepared days before and even with the lack of a cold storage, it can be preserved for latter consumption.

The variants of Adobo can be comparable to the islands in the Philippines depending on the resources or produce that particular area has. Adobo is not limited to a meal on a plate, nowadays Adobo can be seen inside a sandwich bun or a filling inside a Siopao, they even sell Adobo flavored chips and biscuits on the streets. Recently, the Department of Labor and Employment has released a list of jobs that will be in-demand for the next ten years in the Philippines. The list was created based on findings of DOLE's latest labor market study under its "Project Jobs Fit" program. The list was released to the public on June 29 of this year. That was the day when President Aquino announced Baldoz's appointment.

The program has pinpointed the sectors that need more workforce in the next ten years. These sectors are: agribusiness, cyberservices, health and wellness, hotel, restaurant and tourism, mining, construction, banking and finance, manufacturing, ownership dwellings and real estate, transport and logistics, wholesale and retail trade. The research also identified the need to buttress the four emerging industries expected to reinforce employment opportunities, namely creative industries, diversified/strategic farming and fishing, power and utilities, and renewable energy.

This program will help Filipino students to choose the right course or major in college and would give them the opportunity to land a job once they finished college. Aside from that, the case for brain drain would be minimized. This has been one of the problems that the Philippines is trying to resolve. Fresh college graduates would usually apply for a job which is different from the curriculum that they took during their college years. In essence, the college degree earned has somehow been put to waste.

Experience nurses will be needed in health and wellness sector. Animal husbandry graduates, agricultural economists, aquaculturists, and coconut farmers are needed in the agribusiness sector.

Call center agents are still in-demand for the next ten years in cyber services sector. One advantage of applying for a position in a call center is that a degree is not a requirement to get a job in this type of industry. Most of the people I know who are now occupying higher positions in a call center have not finished college.

This Banking and Finance graduate from the Polytechnic University of the Philippines (PUP) is one of the top caliber representatives for Unique Interaction, an American call center based in Ortigas.

"Working in a call center in the Philippines is really a big challenge for me especially that I'm new to this business. I spent most of my time and energy on this job," she said, who handles an inbound account.

It is a very risky to leave my house at midnight for a young lady like me. However, I consider that this is the most rewarding career that we have nowadays and this will be a big help in creating another means of livelihood for us Filipinos especially for fresh graduates like me, she claimed.
On the other hand, Margaret Estanislao, 19, a team leader of the same company, disclosed that placing the agents into action challenge her in keeping her job.

Estanislao, who started as an agent added that they tried everything in sorting out the problem of the customers. "We need to maintain our empathy if the customer is upset. They are pissed and upset not because of the representatives but to the products itself".

Both Geneta and Estanislao agreed that this job has given them the opportunity to enhance their skills and boost their confidence when it comes of interaction with their clients in a phone-to-phone conversation.

"Not to mention the financial aid that it gives to me and my family. I think this industry will continue to prosper in the succeeding years and it will continue to be one of the leading providers of career opportunities for Filipinos," Geneta further said.

It cannot be denied that outsourcing business is one of the most flavored industries in the Philippines and other Asian countries. It appears that contact center executives preferred this country because of the number of students produced every year, which can speak English in American way.
